There are two main types of cinnamon: Ceylonese or True Cinnamon and Cassia. The slight difference is due to the trees that the cinnamon is harvested from. Ceylon cinnamon is primarily found in Sri Lanka and is relatively uncommon. The majority of cinnamon that is used everyday and found in stores is Cassia cinnamon.
